TASTING NOTES
Colour
Rich purple/red with a vibrant purple rim.
Aroma
Distinctly Margaret River; driven by pure Cabernet Sauvignon aromas of blackberry, plum, bay leaf and a touch of black olive.
Palate
The Merlot fruit, and a small splash of Malbec, add texture, balance, length and a luxurious fragrance to create a seamless, uniquely Margaret River red.
Cellaring
Will show youthful, perfumed notes with fresh fruit flavours upon release. For those after additional complexity and softness, three or more years of bottle age is suggested.

Rosemary-infused lamb shank casserole with soft polenta.

The new Redbrook Estate range delivers varietally expressive, fruit-driven wines that are ready to enjoy upon release, with no compromise on the quality and style expected from those bestowed with the Redbrook name.
VINTAGE
2016 was a truly distinct vintage. A dry, warm season was punctuated with a tropical rain event in late January. This natural rainfall pushed back harvest dates and allowed for better vine balance during ripening, smaller bunches and tiny berries. The resultant fruit had wonderful thick skins, incredible concentration and excellent varietal identity.
WINEMAKING
The Cabernet Sauvignon was harvested mid to late-morning, to ensure the fruit reached the winery at a warm, optimum temperature to ensure a healthy, even start to fermentation on skins. The Merlot and Malbec fruit however, were harvested during the coolest part of the very early morning to achieve a cooler temperature so it could be cold soaked on skins for 5 days prior to fermentation.
The selectively harvested fruit was destemmed and fermented over 10 days in stainless steel. The Merlot and Malbec underwent partial wild fermentation. The Cabernet remained on skins for another 20 days to ensure a beautiful, vibrant colour in the final wine. All elements of the blend were then matured in French oak for up to 15 months. Each individual barrel was tasted and assessed to determine which were successful in being included in the final blend. The wine was then carefully blended following these trials and then bottled.

Very bright, youthful, deep red/purple colour. The Bouquet is superbly fresh and vibrant, with stylish oak augmenting violets, blueberries and red berries that overflow from the glass. The wine is medium to full-bodied, intense and bright, with lovely vibrant fruit leading the way and abundant fine-grained tannins backing up. It’s long and superbly balanced. The epitome of elegance.

Such a beautifully poised and expressive wine capturing the key elements of Margaret River. Has a distinct lift of bay leaf and tabacco leaf on the nose. The palate is influenced by a grainy tannin character that holds the fruit line to the long finish. Excellent wine that has been beautifully crafted.
