VINEYARD
The vineyard is planted on deep loam over limestone soils that tend to produce larger berries with higher juice to skin ratios, producing perfect fruit to create a crisp, dry and flavoursome Rosé.
WINEMAKING
The bunches for the Rosé were harvested earlier in the season to retain the natural crisp acidity of the fruit. These bunches were held on skins for just a couple of hours, allowing for the colour and ripe flavours to develop before being lightly pressed. The juice was fermented slowly at low temperatures to maintain the bright aromas of the variety.
CELLARING
Best consumed young but will develop additional complexity with 1 – 3 years in the cellar.
